These Peanut Butter, Banana Chia Pudding Parfaits from Jennifer Chong are easy to make and delicious to eat as a breakfast or dessert treat (if you can wait that long!)
PEANUT BUTTER, BANANA CHIA PUDDING PARFAITS TOPPED WITH STRAWBERRIES & CHOCOLATE RECIPE
MAKES: 2 Cups
Banana Chia Pudding
1 cup Bananas, mashed
1/3 cup Chia Seeds
1 teaspoon Vanilla Extract
1 packet of SPLENDA® Naturals Stevia Sweetener
2 cups Almond Milk (or milk of choice)
Peanut Butter (or Nut Butter of choice)
Cocoa Nibs (or Chocolate)
1. Combine mashed bananas, chia seeds, vanilla extract, SPLENDA® Naturals Sweetener and milk into a bowl, mix well. Cover and place in the fridge for an hour or overnight.
2. Once the pudding has set divide the pudding into two cups, top with a spoonful of peanut butter, strawberries, banana and Cocoa Nibs.
