Splenda Sweet Swaps

Looking for a better snack option? Enter the dream team: banana, peanut butter, and chocolate. These deliciously simple bites are made by hollowing out banana pieces, dipping the bottom portion in chocolate glaze made with SPLENDA® No Calorie Sweetener, sprinkling with chopped peanuts, and then filling with a whipped unsweetened peanut butter filling. Go ahead, treat yourself!

Peanut Butter and Banana Bites Recipe

Serves 6

2 bananas
2 tablespoons chopped peanuts
2 tablespoons unsweetened peanut butter
2 teaspoons skim milk
Chocolate Glaze:
¾ cup SPLENDA® No Calorie Sweetener, Granulated
2 tablespoons cornstarch
2 tablespoons cocoa powder
2 tablespoons water
½ teaspoon vanilla extract

1. Peel each banana, cut off rounded ends, and cut into three equal parts. Hollow out each banana piece with a large straw or thin knife.

2. In a medium bowl, stir together chocolate glaze ingredients until smooth.Dip each banana into the glaze so that the bottom half of the banana is covered by glaze.  Sprinkle one teaspoon of chopped peanuts on each banana piece immediately after applying glaze. Place on wax paper to dry.

3. In a mixing bowl, use a hand mixer to whip unsweetened peanut butter and skim milk until fluffy.  Transfer to a piping bag and fill each banana piece. Serve.
